Coconut Ice cream

Coconuts are such a gift- full of good fats and electrolytes and they make a decadent creamy ice cream. This one you can do in an ice cream maker or freeze overnight, blend, freeze, blend, serve.

Recipe:

1 young coconut

Agave or other sweetener to taste

Vanilla bean or extract

pinch of salt

Method:

Take 1 young coconut and open. Drain the water and scoop out the flesh. You end up with about 2 and 1/2 cups combined
Put it all into your blender and blend until smooth.
Add your sweetener a little at a time until sweet enough for your tastes.
Add vanilla bean or vanilla extract  and a pinch of sea salt.
Blend just long enough to mix.

Then pour it into your ice cream maker and follow their instructions until you have yummy icecream

Variation: chocolate and cherry. Put 1/4 cup raw cacao powder in when at the blending stage.  Stir in cacao nibs for choc chips before putting in the ice cream maker and serve with fresh or frozen cherries.

No surprise that this makes a wonderfully healthy kids snack – they love it.
