Orange Cashew Cream

If you are looking for the icing on the cake and lets face it- it’s the best bit, then go no further than this sumptuous and delightful cashew cream with the texture of thick cream and the zesty and fragrant addition of orange. If one was so inclined and I am, then one would substitute orange blossom water for the plain old garden variety stuff and turn out a goumet dish that was quite frankly a slice of heaven.

Use as icing/frosting/cream/ put it on pancakes and roll up with fresh berries- the world is truly only as small as your imaginationRecipe:

1 cup cashews soaked in orange juice for 2 hours

1tsp orange zest

Agave to sweeten to taste

1/2 cup water or afore mentioned orange blossom water

Method:

Drain the cashews and place in a blender with the other ingredients and blend until smooth.  No really, it’s that easy.

Variations: add a little raw cacao for Jaffa flavor.
