Raw Purple Cauliflower Salad

How beautiful is purple cauliflower? It is all firm, that surprising shade of purple and a change from the usual white kind which although lovely lets face it, isnt exciting.
Make a raw purple cauliflower salad to retain the colour and nutrients of this gorgeous vegetable.
Cauliflower is a cruciferious vegetable related to broccoli, kale, and cabbage and known to have a cancer preventing effects due to its cruciferous compounds which inhibit the mitosis of tumor cells.
It is a great source of vitamins C, and K, as well as dietary fiber and supports liver function and detoxification. Oh and its delicious of course.

Here is a Purple Cauliflower Salad recipe that can be prepared well ahead of time, even the day before as it marinates and the flavour improves.
Remember a good salad and dressing has the five flavours Sweet, Sour, Salty, Bitter and Pungent.
If your recipe includes at least one ingredient that ticks each of the 5 boxes, then you are off to a good start.

Recipe
2 purple Cauliflower (or 1 purple 1 white cauliflower) cut into little bite sized bits
Dressing
the juice of 1/2 orange
the juice of 1/2 lemon
the juice of 1/2 lime
1/4 cup of virgin olive oil
1tsp agave nectar
1/2 cup walnuts
1/2 cup sunflower seeds
pinch of salt
pepper
1 Tbsp fresh corriander
and a little bit of chilli if you like that sort of thing.

Mix up the ingredients and drizzle over the cauliflower.

Toss it every 5 minutes or so and let it marinate for at least an hour before you serve it.

This salad is even better the next day

Serve on a bed of rocket for a green/purple/white fabulousness
